30 Minutes or Less: 6 Easy Dinners

March 5, 2021

On busy weeknights, it’s easy to think that ordering takeout is the way to go, but often you’d still prefer a home-cooked meal. Here at Mission, we know that having easy, fast, and delicious recipes that pair with our products means that a nutritious family dinner is one less thing you have to worry about. We’ve rounded up six of our best, easy ideas for dinner that you can make in 30 minutes or less any night of the week.

Greek Lamb Tacos

If you’re looking for an easy way to combine flavors from across the globe, then try these Greek lamb tacos with a delicious tzatziki sauce. After cooking the lamb and onions in a skillet, along with some flavorful garlic and oregano, add it to our Soft Taco Flour Tortillas. The homemade tzatziki sauce (cucumber, yogurt, salt, pepper, garlic, dill, and lemon juice) serves as a great complement to the lamb mixture, while a topping of diced tomatoes and cucumbers adds a freshness to the dish. For dinner ready in under 30 minutes, you can’t beat this twist on a classic Taco Tuesday.

BBQ Pork Quesadillas

If you’re strapped for time on a weeknight, take advantage of fully-cooked pork available at your grocery store (or use leftovers!) to make this delicious quesadilla. Warm one of our Organic Flour Tortillas in a pan on the stove, then add the BBQ-infused pork, cheese, onions, red pepper, and corn to the top and allow it to slightly melt. Once you place the other tortilla on top, brown each side for a few minutes, and enjoy! These quesadillas are extra delightful paired with sour cream and cilantro on top.

Chicken Club Tacos

For a great chicken dinner idea that’s easy to prepare (and will have your family begging for seconds), try these chicken club tacos. Using grilled chicken from either a previous dinner or the deli section of your grocery store, layer with bacon, cheese, lettuce, tomato, and Caesar dressing on a Street Taco Flour Tortilla. These tacos are the perfect size to pair with side dishes or alone as a fun Friday night treat with a movie in the living room.

Beef Taco Bowls

Do you ever feel like even tacos are a bit too much work for a weeknight? If so, this recipe is for you. Using all of the traditional beef taco elements, these taco bowls allow you to impress your family or guests with much less work. Brown the beef and onions, then flavor with the taco spice mix of your choice. A premade coleslaw mixture can save you time and add some depth to the beef base; add this combination to a bowl, then adorn with lettuce, cheese, and guacamole/sour cream before placing a heaping handful of our Thin and Crispy Tortilla Chips on the side. Deconstructed tacos are sure to be a hit when they’re this delicious!

Pizza Tortillas

For a quick and easy alternative to a labor-intensive homemade pizza, try these individual servings made using our Organic Uncooked Flour Tortillas. Start by cooking one side and then adding pizza sauce, cheese, and any desired toppings. Place in a skillet with the uncooked side down and cover for 40-45 seconds. After the cheese is melted and the tortilla is cooked, remove and enjoy! This is a great easy dinner option for kids and guests since everyone can customize their tortilla pizza with the toppings they like the best!

Vegetarian Roasted Bean and Butternut Squash Tacos

Vegetarian recipes can be delicious and easy, especially when you’re using beans and roasted vegetables. Cut your prep time in half by saving some roasted butternut squash from a previous meal earlier in the week, then repurposing with taco flavors. After warming the black beans and squash in a skillet, add to our warmed Gluten-Free Original Tortilla Wraps along with some queso fresco and salsa verde. These yummy tacos are not only vegetarian but pack a big flavor punch.

Even when you’re short on time, you can serve a wonderful, flavorful meal to your family with these tried-and-true recipes!
