Mexican Pizza

This is the quintessential tortilla pizza recipe. It’s simple, flavorful, double-layered, and it’s got those classic Mexican food ingredients you crave, all sandwiched within individual-sized tortillas and smothered in yummy enchilada sauce. 

  1. The first step in any great Mexican dish is preparing your meat, and this dish is no exception. You’ll cook your ground beef and onions together in a skillet before preparing the pizzas, then add taco seasoning to the ground beef mixture to create that meaty, taco-like topping. 
  2. Pre-cook your Mission Soft Taco Flour Tortillas just enough to help them maintain that crispy, crackly base, then layer them with refried beans and taco meat before topping with a second tortilla. 
  3. Finally, smother with enchilada sauce and top with cheddar cheese. 

The pizzas only need 5-7 minutes in the oven to reach melty, gooey perfection, and then you can top with your choice of fresh tomatoes, black olives, green onions, sour cream, etc.

Chicken Fajita Mexican Pizza

This Mexican pizza variation takes meaty to a whole new level. Instead of ground beef, these tortilla pizza crusts are loaded with fajita chicken, pepperoni, and hard salami. 

  1. Satisfying your traditional pizza cravings, this pizza incorporates red sauce sprinkled with mozzarella cheese and a classic Italian pizza topping of chopped bell peppers. 
  2. Once you’ve added all the fillings, lay a second tortilla on top and sprinkle with more mozzarella. 
  3. After fifteen minutes in the oven, these soft taco-sized pizzas bring to mind the cheesy goodness of a Chicago style with a fajita kick.

Breakfast Pizza

Another of Mission’s flavor-loaded pizza recipes combines breakfast sausage and eggs with the tortill pizza concept. But there’s no need to wait until breakfast to try it!

  1. Spread each tortilla with herbed cream cheese, crumbled chicken sausage, scrambled egg whites, shredded Monterey Jack cheese, and green onion. 
  2. Then place the assembled pizzas into a preheated 400-degree oven. 
  3. Bake 12-15 minutes until the tortilla is crisp and the cheese is melted! 
  4. When they’re done, remove from the oven and slice each into quarters. 
  5. As a final touch, sprinkle with cilantro and serve to much applause, or to mumbled thank you’s around a mouthful of delicious Mexican pizza.

Pizza Burritos

This is where the Mexican Pizza concept gets even more creative. Pizza burritos are loaded with Italian flavors plus the satisfying Mexican food favorite - brown rice.

  1. Start by cooking up one pound of Italian sausage, then heat your tortillas for easier handling while you load each burrito’s filling.
  2. Each burrito gets marinara sauce, pepperoni, brown rice, Italian sausage, sliced spinach, mushrooms, and mozzarella cheese.
  3. Roll your burritos and place them, seam side down, in a baking dish. 
  4. In a small bowl, mix melted butter, Italian seasoning, and garlic powder, then brush the tops of the burritos with the mixture using a pastry brush. 
  5. Finally, sprinkle with parmesan cheese and bake for 15 to 20 minutes.

These Mexican pizza burritos make great portable lunch or dinner for the family!
