5 Fall Potato Dinner Recipes

In addition to pumpkin flavored items, Fall brings cravings of heartier meals. These potato wraps, tacos, and burritos from Mission are satisfyingly filling and delicious.

Autumn brings the changing of leaves, back to school, football season, and lots of discussions about pumpkin spice. In addition to pumpkin-flavored foods, we tend to crave heartier meals as the weather cools. These fall potato dinner recipes, including wraps, tacos, and burritos from Mission are perfect Fall comfort food.

Let’s start the morning off right with a filling Loaded Breakfast Burrito! All the flavors of a loaded baked potato combined with eggs and rolled up into a burrito… yum! Crisp bacon in a cast-iron skillet and then use some of the bacon fat to saute diced potatoes or rutabaga. Add whisked eggs into the center of your potatoes and cook until done. Spread Greek yogurt on a warmed Carb Balance Soft Taco Flour Tortilla and fill with the potato and egg mixture, bacon, shredded cheddar and chopped chives.

Sweet potatoes are packed with needed nutrients and vitamins and can make a hearty addition to your favorite taco dishes This Sweet Potato and Longaniza Tacos Recipe combines skillet-cooked sweet potato slices, browned longaniza or chorizo sausage, and onion mixed with some cumin. Make homemade salsa roja by blending tomatoes, onion, garlic, serrano, cilantro, vegetable stock, and salt in until smooth. Heat in a non-stick saucepan over medium-high heat until the tomato changes to a deep red then add in the potato mixture. Put the potato and salsa mixture in a warmed Organic Flour Tortilla topped with cotija cheese.

For the Low Carb Greek Quinoa and Sweet Potato Burritos Recipe cook diced sweet potatoes and quinoa in salted water until tender and mix with olive oil, lemon juice, and seasonings.
