Vegetable Enchilada Casserole

When it’s chilly outside, a bubbling hot dish is always a crowd favorite. This vegetable enchilada casserole is a healthier way to serve up a classic. Start by roasting cauliflower, onions, and peppers in a mix of cayenne pepper and olive oil to give them a rich flavor, then set aside while you grill two corn cobs (grilling on the cob is easy, then just cut off the kernels for the dish later!).
