6 Easy Queso Dip Recipes for Your Next Taco Tuesday

Having set themes like Taco Tuesday makes meal planning easier. Everyone knows what will be on the menu that night, yet there can be a ton of variety with different proteins, fillings, and types of taco shells. Plus, when each family member gets to put together their own taco, even the pickiest eaters will enjoy their meal.

Adding queso to the menu adds new flavor and fun to your Taco Tuesday night. Put out the queso and chips as an appetizer while you’re finishing the meal prep. Or, the Mexican cheese dip can be drizzled right on the tacos. It also makes for easy nachos or dips on the side of your tacos for chips or quesadillas.

Store-bought queso is usually full of salt and preservatives - it’s not hard to make your own queso, but the little extra effort is worth it! These are six of our favorite queso dip recipes:

  1. If you want a simple recipe, try the Easy Stovetop Queso Blanco. It starts with sautéing onion and garlic in a bit of oil. Then, whisk in milk and flour to thicken the sauce (keep an eye on it, so it won’t stick to the pan!). Grated white American cheese will give you that creamy white color, and then top with tomato and cilantro for seasoning!
  2. For a Classic Slow Cooker Queso, simply add cheese, half and half, seasonings, and some lime juice to the cooker. After two hours, you’ll have a melty and delicious dipping sauce. Try this recipe with our Mission Tortilla Rounds for added scooping fun!

  1. For a heartier dip, try the Chicken Fajita Queso Dip. Start by marinating chicken breast strips (you can also sub in your favorite meat alternative here!) in a homemade taco seasoning combination of chili powder, cumin, garlic powder, and onion powder. The chicken will be cooked on a skillet with a little lime juice and then added to the queso. The queso is made with half and half, Monterrey Jack and Fontina cheeses. Topped with a garnish of green peppers, onion, jalapeños, tomatoes, and fresh cilantro. Our Tortilla Strips are thick enough to take on this yummy Mexican cheese dip!
  2. Chorizo is a highly-seasoned, spicy pork sausage and is a perfect ingredient for flavorful queso with a bit more heat. This spicy Chorizo Queso Dip combines browned chorizo and onions with Monterrey Jack and white cheddar cheeses, milk, and chopped peppers. You’ll love how the chorizo brings an added flavor to your typical queso!

  1. Beer Queso is a popular way of making this cheesy dip, especially around Cinco de Mayo. Usually made with a lighter, Mexican beer, darker beers can also be used for a more robust flavor. This recipe includes seasoned browned beef with shallots, a mixed blend of Mexican and cheddar cheeses, and half and half. Garnished with slices of avocado, serrano peppers, and cilantro - and you can’t go wrong with our Mission Organics Yellow Corn Tortilla Chips
  2. Need a dairy-free option? The Vegan Poblano Black Bean Queso dip recipe blends a nutritious mixture of cashews, peppers, onion, garlic, salsa, hemp and flax seeds, nutritional yeast, and coconut milk. This mixture, along with black beans, is heated on the stovetop and then garnished with poblano peppers, red peppers, onions, and cilantro. 

Serve all of these delicious recipes nice and hot with a bowl of your favorite Mission chips!

Once you have the basics of making queso down, you can make your own variations. Add black, pinto, or kidney beans. Swap out meats, or use dairy alternatives. Create your garnishes with different combinations of peppers, tomatoes, onions, avocado, and fresh herbs. The options are almost endless!
