Choosing a vegan lifestyle doesn’t have to mean limiting your menu options! We here at Mission know that the quintessential Mexican recipes often include cheese and cream, so finding Mexican vegan recipes is sometimes a challenge; we’ve set out to deliver some delicious vegan tortilla recipes so that you never have to choose between your craving for Mexican and your vegan lifestyle again. Here are six delectable vegan recipes that are sure to leave everyone around your table satisfied.

Loaded Vegan Quesadillas

These vegan quesadillas are so full of flavor and texture that no one (not even your non-vegan friends) will miss the cheese. The key is to cook your onions, peppers, and mushrooms with bold spices like cumin and chili powder before adding any liquid from beans or sauces. While your filling is cooking, prepare a homemade guacamole (and don’t skimp on the lime and salt!) and spread on half of a Gluten Free Original Tortilla Wrap; these tortillas are big enough to hold a lot of filling, so they’re a great choice for family dinners. The final step is to fill with your veggie mix and heat in a skillet with some oil and enjoy as soon as it’s hot and crispy!

Vegan Poblano Black Bean Queso Dip

This rich and creamy vegan dip gets its depth of flavor from nuts, seeds, vegetables, and some coconut milk, so if you’re looking for a delectable dip that doesn’t rely on vegan cheeses, this is the one. Use a high-quality blender to combine cashews, spices, peppers, nutritional yeast, and coconut milk. Pour everything into a pot over medium heat and add black beans, being careful not to let the mixture boil. When everything is heated through, garnish with some extra diced veggies and cilantro, then dig in! Our Organic Blue Corn Tortilla Chips are a great complement for this dip; their hearty texture and unique flavor will leave you coming back again and again!

Loaded Vegan Nachos

For an easy weeknight meal that will really fill you up, try these vegan nachos that pair grilled vegetables with vegan cheese and sour cream. Start by coating mushrooms, bell peppers, and onions with fajita seasoning and then placing in a single layer on aluminum foil to grill over high heat (or put into the oven and bake at 425). Once the veggies are slightly soft, layer our crispy Rounds Tortilla Chips in a baking dish and top with veggies, vegan cheddar cheese, and black beans. Once the cheese is bubbly, take out and finish with other toppings of your choice including avocado, lime, vegan sour cream, and jalapeño; the tortilla rounds will hold up to all of the layered goodness stacked on top, so don’t be afraid to pile it on!
