Crispy Tofu Tacos with Avocado Lime Crema

Don’t let the word “tofu” turn you away from these flavorful tacos--they’re tossed with salt, black pepper, cumin powder and smoked paprika, then coated in cornstarch to give them the perfect, golden brown crisp. Not to mention tofu is packed with protein and amino acids and may help reduce your risk of heart disease

While you prepare the tofu in this recipe, you’ll make fresh avocado lime crema using a blender or food processor. The simple combination of fresh lime, salt, pepper, and cilantro adds so much flavor to this recipe’s avocado highlight! Get the perfect drizzling consistency by adding a tablespoon or two of milk to the mixture.

Warm your Mission Gluten Free Soft Taco Flour Tortillas, then top with crispy tofu, shredded red cabbage, sliced jalapeños, cilantro, lime wedges and finally finish it off with a nice drizzle of the avocado lime crema.

Spicy Pico de Gallo with Avocado

Talk about a party-pleasing and Better For You appetizer, this Spicy Pico de Gallo with Avocado pairs the freshness of a classic pico de gallo with the kick of a spicy salsa to create a pure chip-dipping delight. Diced tomatoes, onions, cilantro, avocado — the gang's all here. Plus some hot peppers to get the party started.

It takes just a few minutes to dice all the fresh ingredients, then a few minutes more to let the mixture sit and really soak up the citrus of the lime juice and the spice of the jalapeno. Surround your serving bowl with a tray of Strips Tortilla Chips, and your guests will be snacking happily all night!

Grilled Spicy Shrimp Tacos with Avocado Mango Salsa and Chipotle Mayo

Shrimp marinated with chipotle peppers in adobo sauce, cinnamon and thyme give this avocado recipe a savory kick. While the shrimp is marinating, prepare the chipotle mayo with more chipotle peppers and fresh lime. For the Avocado Mango Salsa chop two mangos and two avocados, add the juice from one lime and chopped cilantro leaves. Toss to coat and season with salt to taste.

When it’s time to eat, grill the shrimp on skewers and assemble your tacos on Mission Extra Thin Yellow Corn Tortillas. Top the shrimp with sliced cabbage, avocado mango salsa, and your chipotle mayo for the perfect combination of savory, sweet, spicy, and smooth.

Baked Avocado Chicken Burritos

Gluten Free Original Tortilla Wraps before assembling the burritos, then load them with cooked chicken, cheddar cheese, diced avocado, sour cream, and cilantro. Tuck in the ends and roll up your burritos before placing them in a baking dish. They bake for just 12-15 minutes until the tops are golden brown and crispy. Serve with salsa or more sour cream.

Low Carb Fish Tacos with Avocado Crema

Avocado recipes aren’t complete without the classic fish taco. And these are a great low carb option that’s still packed with flavor. For the avocado crema, combine ripe avocado, sour cream, fresh cilantro, lime juice, and salt and pepper in a food processor. Blend until smooth and set aside in the refrigerator.

Next, marinade chunks of firm white fish in olive oil and a blend of paprika, cumin, onion powder, and oregano. After 30 minutes, roast in a preheated oven until the fish has cooked through. While it cooks, prep the slaw with red cabbage, cucumber, and green onion.

Use Carb Balance Soft Taco Whole Wheat Tortillas to make your own hard taco shells by draping the tortillas over the bars of your heated oven grill racks until they’re crispy. Then load them up with the savory roasted fish, crunchy slaw, and smooth avocado crema. Even the kids won’t be able to get enough!
