Enchilada Bakes

This gluten-free Chipotle Chicken Enchilada Bake is an easy-to-make dish with both filling and delicious results. Saute shredded chicken in water with chipotle seasoning until heated. Spread sour cream on a heated Gluten Free Original Tortilla Wrap and sprinkle with cheddar cheese and diced onion. Then add ¼ cup of the chicken and roll it up. Place the chicken enchiladas side by side in a greased baking dish with the seam side down. Spread salsa over the enchiladas, top with additional cheese, and bake covered until heated through and the cheese is melted. Serve with a side of rice and your favorite toppings.

Prefer your enchiladas with green chili sauce? This nacho-style Chicken Verde Enchilada Bake might be the perfect recipe for you! Saute onions until tender and then add bell peppers, canned green chilis, sour cream, rotisserie chicken, and shredded Monterey Jack cheese until blended.
