Instant Pot Shredded Beef Tacos

There’s no easier weeknight meal than something you can put into the slow cooker or instant pot; a little bit of work upfront, and then the majority of the cooking happens while you’re free to do other things! Our shredded beef tacos use the instant pot to bring out the delicious flavors of a roast without all the hassle - plus, you’ll be using our Low-Calorie Yellow Corn Tortillas, so the meal will be filling and healthy. After your roast and spices are cooked, simply shred the meat with two forks and serve with our warmed tortillas. Add a taco topping bar so that everyone in the family can customize their own plate!

Corn, Black Bean, and Bell Pepper Enchiladas
