Hearty Corn Recipes Perfect for Fall

Corn is a symbol of fall as well as being a hearty and delicious addition for your fall dishes. These seasonal corn recipes from Mission will add some spice to your tiresome weekly meal planning.

Corn has many associations with fall. The corn season is coming to an end so it can be plentiful in the stores. Dried corn cobs are used to beautifully decorate our porches and tables. And many of us will wander through corn field mazes during the Halloween season. Rich in vitamin C and fiber, corn is an antioxidant protecting against disease. It is a filling and delicious addition for your fall dishes.

Dips

Kick off Fall with these delicious dips. Perfect companions for your chips on game day or as an after school snack. 

For the Roasted Poblano and Corn Guacamole Recipe roast corn and poblano peppers under the broiler until the corn is charred and the pepper skin blisters. Add to a freshly made guacamole of mashed avocados, cilantro, minced onion, and lime juice, then mix in diced tomatoes. This guac with a kick goes perfectly with our Organic Blue Corn Tortilla Chips

Street Corn Jalapeno Dip Recipe is another spicy crowd-pleasing dip. Broil corn, jalapenos, and green chilis that have been tossed in oil and salt. Mix into an oven-proof dish with Pepper Jack cheese, mayonnaise, and sour cream and bake until bubbly. Top with finely chopped green onions and serve with your favorite Mission Organic Tortilla Chips.

Cheesy Bacon Corn Dip? You had us at cheesy bacon! Grill corn on the cob until browned and skillet-cook the bacon until crisp. Add the corn kernels and bacon to a mixture of cream cheese, cheddar, sour cream, and chives then bake until browned. Serve with Thin and Crispy Tortilla Chips

Tacos

Add the sweet, crunchy goodness of corn to these taco dishes! 

Assemble Chorizo and Corn Tacos with crispy chorizo, seasoned corn, crumbled queso fresco, avocado slices, and Pico de Gallo. The corn is cooked after the chorizo in the remaining fat for additional flavoring and then seasoned with cumin, salt, and pepper. Warmed Organic White Corn Tortillas are the perfect vessel for these tasty tacos.

For a delicious vegetarian taco, try the Roasted Zucchini, Corn, and Black Bean Tacos. Roast a vegetable medley of sliced zucchini, sweet corn kernels, onions, and jalapenos with black beans.  Seasoned with olive oil, chili, garlic, and smoked paprika seasonings the vegetable mixture is added to a warmed Organic White Corn Tortilla  with fresh salsa and your other favorite toppings.  

These Pork Tacos with Corn Salsa and Avocado Crema start with cooking seasoned pork tenderloin cubes in a cast iron skillet with green chilis, lime juice, and vinegar. Add to Soft Taco Flour Tortillas topped with a corn salsa of skillet cooked corn kernels, peppers, tomatoes, red onions, lime juice, cider vinegar, and seasoning. Don’t forget the Avocado Crema and Cotija cheese! 

Enchiladas

Add some extra veggies and heartiness to your favorite enchiladas with these filling fall dishes. 

These vegetarian Corn, Black Bean, and Bell Pepper Enchiladas are made by cooking red onions, garlic, corn kernels, and black beans in a skillet. Then rolling the mixture into an Organic Flour Tortilla and topping with a heated homemade tomatillo salsa that was blended with garlic, onion, jalapenos, cilantro, and vegetable broth. Top the enchiladas with cotija cheese and bake for 8-10 minutes.

Our Charred Corn, Chicken, and Poblano Enchiladas Recipe is a delicious combination of shredded chicken, grilled corn and poblano peppers, melted cream cheese and enchilada sauce. All rolled into an Organic Whole Wheat Tortilla.Top with Pepper Jack cheese and bake until hot inside and tortillas are browned on the outside. Decorate with a topping of remaining corn and pico de gallo.
