Kid-Friendly Mexican Meals

Making dinner for your family can be a moving target – everyone’s tastes seem to change daily! Having some family favorites that you can count on is great, but here at Mission, we know that spicing things up with some new recipes every so often is a great way to keep dinner exciting! If you’re looking for new recipes to serve on Taco Tuesday and beyond, we’ve rounded up five of our favorite kid-friendly Mexican favorites for you to try this week.

Nachos with Mexican Ground Beef and Olives

Nothing makes a Mexican dinner more fun than a big plate of nachos. Kids love to pull apart the cheesy chips and scoop their toppings – they’ll even fight for the best final piece! To easily assemble your nachos, prepare all of the ingredients ahead of time. Brown the ground beef (or your meat/meat substitute of choice) and then add tomatoes, garlic, olives, and onion for a few more minutes of sautéing. Shred your cheddar cheese (or have the kids help with dinner and shred for you!) and sprinkle on top of the ground beef mixture on the center of a family-sized platter. Arrange our Organic Yellow Corn Tortilla Chips around the edges and ring the dinner bell! 

Mexican Pizza

What happens when half the kids want pizza, and the other half want Mexican for dinner? Avoid potential pandemonium with this Mexican pizza recipe. Using our delicious Soft Taco Flour Tortillas as the “crust” will give you a perfect base for layering Mexican flavors, pizza style. Cook ground beef (or make it vegetarian and only use beans!) and onions, then layer with beans, cheese, and sauce before putting it into a hot oven for 5-7 minutes. Your pizzas will turn out best if you crisp the tortillas in a hot pan on the stove before layering. For added fun, have the kids help assemble their own pizzas!

Crockpot Cilantro Lime Chicken

Cooking dinner for kids can be time-consuming, so on busy nights, opt for an easier recipe in the crockpot! This cilantro lime chicken combines quintessential Mexican flavors in a dinner that the whole family will love. Cook your chicken on high for 4 hours (low for 6-8 hours) with some lime juice, cilantro, garlic, and pepper (check halfway and add some liquid if necessary). At dinnertime, put out the delicious chicken along with your family’s favorite taco toppings – make sure to include lime wedges and cilantro to complement the flavors in the chicken! Cheesesteak Quesadillas

If your family loves the melty goodness of a quesadilla, then add this cheesesteak quesadilla recipe to your dinner rotation. By filling our Burrito Flour Tortillas with steak, cheese, mushrooms, and plenty of bell peppers, this recipe is more filling than your typical quesadillas. Start by cooking your steak so that it has plenty of time to rest (about 10 minutes) as you prepare the remaining ingredients. Sauté your onions and bell peppers together in the pan you used for cooking the steak (adds some flavor!) and then stir in the mushrooms for an additional few minutes. Spread the sliced steak and vegetables over the tortillas, then top with cheese and avocado slices. Finish each quesadilla with an additional tortilla on top before browning on the stove for about 3 minutes per side. Your whole family will love this hearty take on a Mexican classic.

Mexican Street Corn Chicken Tacos

There’s something fun about making char-grilled meals at home for your family - the extra flavor that comes from grilling at high heat can really enhance your dinner! These chicken tacos have a fun twist by using charred corn as a primary ingredient; older kids will love to help you grill the corn, flipping at just the right moment to blacken both sides. Season your chicken strips with taco seasoning and then grill at high heat, as well. Assemble everything on our warmed Organic Flour Tortillas with your homemade crema (combine cilantro, mayonnaise, lime juice, chili powder, salt, and jalapeño to taste) and serve immediately. This street food will bring the authentic flavors of Mexico to your dinner table any night of the week.
