Our Favorite Enchilada Recipes For Summer Dinners On The Patio

Enchiladas are traditionally made with corn tortillas, stuffed with meat or vegetables and topped with a spicy sauce. These recipes take some creative twists and use delicious, fresh ingredients. 

Chicken Enchiladas

New to making enchiladas? These Chipotle Cheesy Chicken Enchiladas are an easy-to-make recipe perfect for beginners. Combine cooked and shredded chicken breast meat with chilies, cream cheese, quesadilla cheese, and chipotle peppers. Wrapped in Carb Balance Soft Flour Tortillas, topped with green enchilada sauce and baked. Or try this Chipotle Chicken Enchilada Bake with rotisserie chicken, salsa, chipotle seasoning.

For this traditional Chipotle Chicken Enchiladas recipe, cook chicken breasts in a stock pot or dutch oven with enchilada sauce, adobo seasoning, and chipotle pepper until it shreds easily. The shredded chicken is combined with heated enchilada sauce, queso fresco, green chilies, and chipotle sauce and then rolled into warmed Extra Thin Yellow Corn Tortillas. Top with additional enchilada sauce and cheese and bake.

These Charred Corn, Chicken and Poblano Enchiladas offer a unique smokey taste. Grill the corn and poblano peppers until lightly charred. Skillet cook onions, half of the corn, shredded chicken, cream cheese, enchilada sauce, and seasonings. Wrap the filling in Mission Organics Whole Wheat Tortillas, top with enchilada sauce, and cheese then bake. Garnish with the remaining charred corn and pico de gallo. 

Gluten Free? Try this Gluten Free Chicken Mushroom Enchiladas recipe! Sauteed mushrooms, kale, garlic, and onions are combined with rotisserie chicken and salsa verde. In this tasty vegetarian dish, Corn, Black Bean, and Bell Pepper Enchiladas, the vegetables are sauteed in olive oil with onions and wrapped in a tortilla. A fresh tomatillo sauce topping is made by blending together tomatillos, garlic, onion, jalapeño, cilantro, and vegetable broth and then heating it up with a bit of olive oil. 

The Vegetable Enchilada Casserole uses seasoned and roasted cauliflower, mushrooms, onions, and red peppers as well as grilled corn from the cob. The casserole layers Organic White Corn Tortillas, the vegetable mix, avocados, baby spinach, and cheese which is all baked and garnished with jalapeno slices and spring onions.
