Try These Mushroom Recipes From Mission for a Twist on Mexican Cuisine

Whether you’re a vegetarian or just a fungi fanatic, mushrooms are an essential ingredient for many people. While not often considered, mushrooms make a great substitute or star attraction in many Mexican dishes.

Today, we’ll break down some of the most popular mushroom recipes in the Mission collection. From authentic tacos to delicious quesadillas, you’ll have everything you need to mix up your next Mexican night or Taco Tuesday with some mushrooms. 

Grilled Steak and Mushroom Kebab Tacos

If you’ve never had a kebab taco, you’re seriously missing out. These delectable creations are super easy to make and will become a staple on your weekly menu. Start by coating steak, mushrooms, peppers, and onions in the seasoning mixture. 

After letting marinate for up to two hours, you’re ready to fire up the grill or pan. Cook times vary, but make sure to frequently turn the kabobs. Portobello Mushroom Quesadillas

If you’re looking for something a bit quicker than kebabs, these quesadillas pack tons of flavor and are ready in a snap. Mission’s Organic White Corn Tortillas are the perfect base for this snack, offering authentic taste in every bite. 

Start by sautéing onions and then adding in the portobello mushrooms. When cooked, set aside and begin to prepare the tortillas. Add the sautéed mixture as your quesadilla base, and top with mozzarella, provolone, and some rosemary. Cook each side for approximately two minutes, or until your cheese is melted. Few quesadilla recipes can rival the combination of flavors in this meal.

Vegan Mushroom Tacos Al Pastor

You don’t need meat to have traditional Mexican flavors in this wildly popular dish. Mission’s Grain Free Tortillas make a great vegan-friendly, gluten-free substitute for regular tortillas, making this dish entirely vegan. 

Marinate your mushrooms with adobo chiles, spices, and pineapple before beginning to cook. In a large skillet, you’ll cook mushrooms for around 10 minutes while intermittently adding additional ingredients. Finally, grill pineapple for a true chef's kiss moment. After warming tortillas, constrict your taco however you see fit and try adding avocado, red onions, cilantro, and shredded cabbage for additional flavor.

Gluten Free Chicken Mushroom Enchiladas

Even if you don’t need a gluten-free diet, these enchiladas will hit the spot. With fresh veggies, chicken, and salsa verde, you’ll have a filling meal perfect for Mexican night. 

After preheating your oven at 400 degrees, you’ll cook mushrooms, chicken, and vegetables in a skillet. To construct your enchiladas, place your ingredient mixture into Gluten Free Original Tortilla Wraps from Mission. Place seam side down, and top the whole dish with the remaining salsa verde. After baking for 20 to 25 minutes, you’ll be ready to enjoy this satisfying gluten-free dish. 

Spinach, Mushroom and Green Chile Wraps
