    lb. Large shelled shrimp
  • 2

    tbsp. Vegetable oil, divided
  • 2

    tbsp. plus 1 tsp. Cajun seasoning blend, divided
  • 1

    Medium onion, thinly sliced
  • 1

    Green bell pepper, seeded and thinly sliced
  • 1

    Red bell pepper, seeded and thinly sliced
  • ½

    tsp. Salt
  • 1

    cup Greek yogurt, low-fat plain
  • 1

    tsp. Paprika
  • 1

    tsp. Hot sauce
  • 1

    Garlic clove, minced or pressed
  • 4

    Large Romaine lettuce leaves

INSTRUCTIONS


  • Step 1

    Preheat oven to 450℉. On a large baking sheet toss shrimp with 1 tablespoon oil and 2 tablespoons Cajun seasoning. Bake until cooked through, about 10 minutes.

  • Step 2

    Meanwhile, in a large skillet heat remaining 1 tablespoon oil over medium. Add onion, peppers, and salt and sauté until softened, 6-8 minutes.

  • Step 3

    In a medium bowl whisk together yogurt, remaining 1 teaspoon Cajun seasoning, paprika, hot sauce, and garlic.

  • Step 4

    Lay wraps flat. Place 1 lettuce leaf on each wrap and top with onions, peppers, shrimp, and yogurt sauce.

  • Step 5

    Fold in sides, then fold bottom of wrap over filling and roll up tightly. Cut in half and serve.
