Roasted Sweet Potato Wraps

    small sweet potato, cubed
  • 1

    ear roasted corn
  • 1

    cup black beans
  • 1

    cup chopped cilantro
  • ¼

    cup pickled onion
  • ½

    serrano, sliced
  • ¼

    teaspoon chili powder
  • lime juice
  • salt & pepper
  • pepitas
  • extra-virgin olive oil

  • Yogurt Sauce:
  • ½

    cup greek yogurt
  • 1

    tsp lime juice
  • ¼

    tsp sea salt


  • Step 1

    Preheat the oven to 425°F and line a baking sheet with parchment paper.

  • Step 2

    Drizzle the corn and sweet potatoes with olive oil, salt, and pepper. Roast the corn for 8 minutes, remove and let cool. Roast the sweet potatoes for 25 minutes or until golden brown around the edges.

  • Step 3

    Slice the corn kernels into a medium bowl and add the black beans, cilantro, pickled onion, and cilantro, 1 teaspoon olive oil, juice of 1/2 lime, 1/4 teaspoon salt and the chili powder.

  • Step 4

    In a small bowl, stir together the yogurt, lime juice, and salt.

  • Step 5

    Assemble the wraps with a slather of yogurt sauce, the corn/bean mixture, the roasted sweet potatoes and pepitas. Thin the yogurt sauce with a bit of olive oil or water and drizzle on top. Wrap and enjoy!
