Step 1:

In a medium sauté pan, heat 2 tbsp of avocado oil over medium-high heat. Add the bell peppers and cook for 3-4 minutes. Then add the onions and cook for another 2-3 minutes. Season with salt and pepper and set aside.

Step 2:

In the same pan, over medium heat, add the remaining 2 tbsp of oil. Add the whisked eggs and scramble until fluffy and set.

Step 3:

To assemble, warm the tortillas. Evenly divide the sriracha mayo, scrambled eggs, mixed cheese, sautéed bell pepper and onion mixture and crispy bacon among the tortillas.

Step 3:

Fold up the bottom of each tortilla over the filling, then fold in the sides and roll up tightly.

Step 4:

Place the wraps in a panini press for 2-3 minutes and serve immediately.
