Easy Chicken Tacos with Sweet Pepper Salsa
Spiced with chili powder and cumin, diced chicken is sautéed and garnished with a colorful bell pepper salsa for a fresh and easy taco that’s perfect for a quick dinner any night of the week.
In medium bowl, stir together jalapeño, tomato, bell peppers, red onion, cilantro, lime juice, salt and black pepper. Let stand for 10 minutes for flavors to marry.
Meanwhile, in large skillet set over medium-high heat, heat oil. Cook chicken, salt and pepper, stirring occasionally, for 5 to 8 minutes or until starting to brown. Stir in onion, garlic, chili powder, cumin, oregano and paprika. Cook, stirring occasionally, for 3 to 5 minutes until chicken is cooked through and onion is tender.
Warm tortillas according to package directions.
Divide chicken mixture among tortillas and top with bell pepper salsa. Serve with guacamole and pico de gallo.
Tip: Drizzle tacos with sour cream or garnish with crumbled queso fresco if desired.
