Thai Chicken Wrap with Peanut Sauce

Step 1:

In a medium-sized bowl, mix together the red cabbage and cilantro, then set aside.

Step 2:

In a large bowl, place the chicken and half of the peanut sauce. Marinate for 10 minutes.

Step 3:

In a large sauté pan, heat 4 tbsp of avocado oil over medium-high heat. Remove the chicken from the marinade and add it to the pan.

Step 4:

Cook for 6-7 minutes on each side, or until the chicken is cooked through.

Remove the chicken from the pan and transfer it to a cutting board. Slice the chicken evenly on a bias.

Step 5:

To assemble, warm the tortillas. Evenly divide the cabbage mixture, sliced chicken, 1 tbsp peanut sauce, cucumbers, carrots, basil and crushed peanuts among the tortillas.

Step 6:

Fold up the bottom of each tortilla over the filling, then fold in the sides and roll up tightly.

Step 7:

Serve immediately with lime wedges and extra peanut sauce, if desired.
