Mediterranean Veggie Wrap

Step 1:

In a small bowl, combine the tahini, parsley, lemon juice and salt until well mixed. Set aside.

Step 2:

To assemble the wraps, warm the tortillas and evenly divide all ingredients in the center of each tortilla, starting with the red pepper hummus, then adding the spinach, red onions, cucumbers, carrots, tomatoes, olives, feta and finishing with 1 tbsp of the herb tahini.

Step 3:

Fold up the bottom of the tortilla over the filling, then fold in the sides and roll up tightly.

Step 4:

Serve with extra tahini on the side and lemon wedges.
