Fajita Chicken Nacho Bites

Step 1: Preheat broiler

Preheat broiler.

Step 2: Prepare fajita mixture

In large skillet set over medium-high heat, heat oil. Cook onion, green pepper, red pepper and garlic, stirring occasionally, for 3 to 5 minutes or until starting to soften. Stir in chicken and fajita seasoning. Cook, stirring occasionally, for 2 to 3 minutes or until heated through. Stir in lime juice.

Step 3: Assemble nacho bites

Arrange tortilla chips on foil-lined baking sheet in single layer. Divide chicken fajita mixture and Cheddar among chips.

Step 4: Broil nacho bites

Broil for 1 to 2 minutes or until cheese has melted.

Step 5: Garnish nacho bites

Transfer sour cream to piping bag and snip a small corner. Drizzle with sour cream and garnish with cilantro.

Tip: Substitute Cheddar with cotija cheese or Monterey Jack cheese if preferred.
