cups Cauliflower florets -

cup Buffalo sauce -

cups Cabbage, shredded, or coleslaw mix -

cup Ranch dressing -

cup Cheddar cheese, grated -

INSTRUCTIONS

Step 1
Preheat oven to 425 ̊F. Toss together cauliflower, buffalo sauce, oil, salt and pepper. Arrange in single layer on parchment paper–lined baking sheet; roast for 25 to 30 minutes or until lightly charred and tender.

Toss cabbage or coleslaw mix with ranch dressing. Let stand for 10 minutes.

Step 3
Assemble buffalo cauliflower in warm tortillas with ranch coleslaw and cheese. Garnish with green onions.

Substitute crumbled blue cheese for cheddar cheese, if desired.
