Grilled Cucumber Salsa

1bag Mission Thin & Crispy Tortilla Chips
1English Cucumber, halved lengthwise
1small red onion, cut into 1/2-inch rounds
2jalapenos, halved lengthwise and seeded
2tbsp finely chopped fresh cilantro
2tbsp finely chopped fresh mint
¼cup lime juice
Preheat grill to medium high heat; grease grate well.
Grill cucumber, red onion and jalapenos for 2 to 3 minutes per side or until charred and tender; cool slightly. Dice cucumber, red onion and jalapeno.
Toss together grilled diced veggies, cilantro, mint, lime juice and salt. Let stand for at least 5 minutes for flavors to marry. Serve salsa with chips.
Salsa also pairs nicely with seafood or chicken tacos.
