INGREDIENTS

    bag Mission Thin & Crispy Tortilla Chips
  • 1

    English Cucumber, halved lengthwise
  • 1

    small red onion, cut into 1/2-inch rounds
  • 2

    jalapenos, halved lengthwise and seeded
  • 2

    tbsp finely chopped fresh cilantro
  • 2

    tbsp finely chopped fresh mint
  • ¼

    cup lime juice
  • ½

    tsp salt

INSTRUCTIONS


  • Step 1

    Preheat grill to medium high heat; grease grate well.

  • Step 2

    Grill cucumber, red onion and jalapenos for 2 to 3 minutes per side or until charred and tender; cool slightly. Dice cucumber, red onion and jalapeno.

  • Step 3

    Toss together grilled diced veggies, cilantro, mint, lime juice and salt. Let stand for at least 5 minutes for flavors to marry. Serve salsa with chips.

    Salsa also pairs nicely with seafood or chicken tacos.
