Instant Pot Chipotle Honey Chicken Tacos
This is the moment your Instant Pot has been waiting for. Pour in the meat, chipotle peppers, adobo sauce and honey, and in a matter of minutes you’ll have seasoned Chipotle Honey Chicken Tacos pressure cooked to perfection.
Add chicken, broth, chipotle peppers, adobo sauce, 2 tbsp. honey, garlic, cumin and ½ tsp. salt to Instant Pot cooker. Lock the lid. Select Pressure Cook/Manual setting on High Pressure for 8 minutes.
When pressure cooking is complete, Quick Release the pressure on your Instant Pot.
Meanwhile, toss together onion, apple cider vinegar, and remaining honey and salt. Let stand for 10 minutes.
Remove honey chipotle chicken from Instant Pot; shred chicken with 2 forks. Return to Instant Pot, stirring to coat with cooking liquid.
Warm tortillas according to package directions. For healthier tacos, use grain-free tortillas.
Divide chicken evenly among tortillas; top with avocado and quick-pickled onions. Garnish with cilantro. Serve your chipotle honey chicken tacos with lime wedges.
