    Mission Grain Free Tortillas, warmed
  • 1

    lb. chicken thighs, boneless and skinless
  • 1

    cup sodium-reduced chicken broth
  • 2

    chipotle peppers in adobo sauce (canned), minced
  • 2

    tbsp. adobo sauce
  • 3

    tbsp. honey, divided
  • 4

    whole garlic cloves
  • 1

    tsp. ground cumin
  • ¾

    tsp. salt, divided
  • 1

    red onion, thinly sliced
  • cup apple cider vinegar
  • 1

    avocado, halved, pitted, peeled and diced
  • 2

    tbsp. cilantro, finely chopped
  • Lime wedges, for serving

INSTRUCTIONS


  • Step 1

    Add chicken, broth, chipotle peppers, adobo sauce, 2 tbsp. honey, garlic, cumin and ½ tsp. salt to Instant Pot cooker. Lock the lid. Select Pressure Cook/Manual setting on High Pressure for 8 minutes.

  • Step 2

    When pressure cooking is complete, Quick Release the pressure.

  • Step 3

    Meanwhile, toss together onion, apple cider vinegar, and remaining honey and salt. Let stand for 10 minutes.

  • Step 4

    Remove chicken from Instant Pot; shred chicken with 2 forks. Return to Instant Pot, stirring to coat with cooking liquid.

  • Step 5

    Warm tortillas according to package directions.

  • Step 6

    Divide chicken evenly among tortillas; top with avocado and quick-pickled onions. Garnish with cilantro. Serve with lime wedges.
