INGREDIENTS

    bag Mission Organics Blue Corn Tortilla Chips
  • 10

    oz corn kernels
  • 2

    jalapenos, diced
  • 1

    can green chiles (4oz), drained
  • 1

    Tbsp vegetable oil
  • ½

    tsp salt
  • 2

    cup shredded pepper jack cheese (8oz), divided
  • ½

    cup mayonnaise
  • ½

    cup sour cream
  • 2

    green onions, finely chopped

INSTRUCTIONS


  • Step 1

    Preheat broiler.

  • Step 2

    On a baking sheet, combine corn, jalapenos, green chiles, oil, and salt. Broil until corn is lightly browned, 8-10 minutes. Reduce oven temperature to 425℉.

  • Step 3

    In a medium bowl combine 1 cup Pepper Jack, mayonnaise, and sour cream. Stir in corn mixture and transfer to a small baking dish. Sprinkle with remaining 1 cup Pepper Jack.

  • Step 4

    Return to oven until cheese is melted and dip is bubbly, about 10 minutes.

  • Step 5

    Sprinkle with green onion and serve with tortilla chips.
