Organic Flour Tortillas

cups Rotisserie chicken, shredded and skinless

avocado, medium ripe, pitted and chopped

tbsp lime juice, divided

tbsp Mayonnaise

tsp salt, divided

cups purple cabbage, shredded
1
large mango, ripe, pitted, peeled and cubed
¼
cup fresh mint, chopped
½
jalapeño with ribs and seeds removed and finely minced
Instructions
Step 1
In a medium bowl, mash avocado with fork. Stir in 1 tablespoon lime juice, mayonnaise, and ¼ teaspoon salt. Continue to mash until smooth.
Step 2
In a separate bowl, toss cabbage with remaining tablespoon lime juice and ¼ teaspoon salt.
Step 3
Lay out tortillas on a clean work surface and spread each with a layer of avocado spread leaving a ½” border all the way around.
Step 4
Top with shredded chicken, cabbage, mango, mint and jalapeño. Fold in one end then roll tightly to create wrap.
