    lbs chicken breast

    teaspoon your favorite gluten-free spice blend
  • 8

    oz brick of cream cheese
  • ½

    cup cheddar, shredded
  • 3

    scallions, chopped
  • 2

    medium vine-ripened tomatoes, diced

INSTRUCTIONS


  • Step 1

    Heat grill and then cook chicken breast until clear juice runs free from each side.

  • Step 2

    Once chicken is done, slice it into smaller pieces. Puree in a food processor with cream cheese until fine and spreadable.

  • Step 3

    Heat oven to 350 degrees. Lay out tortillas on 2 baking sheets. Spread 4 with cream cheese chicken mixture. Sprinkle with veggies and cheese.

  • Step 4

    Bake for 2 - 3 minutes per side until golden brown. Serve with dipping sauce.

  • TO MAKE DIPPING SAUCE

  • Step 1

    Combine yogurt and sauce until well combined.

  • Step 2

    Serve chilled with your cream cheese chicken quesadillas.
