Grilled Chicken Avocado Tacos
Everything tastes better in a fluffy tortilla. Especially when topped with avocado. This easy grilled chicken taco recipe loads up on spicy tender chicken strips, red bell peppers, jalapenos, and fresh avocado slices. Six simple ingredients. One very soft tortilla. Zero complaints. It doesn’t get any tastier than that.
Mission Soft Taco Flour Tortillas, warmed
Boneless, skinless chicken thighs (about 1.5 lbs total)
tsp. Chili powder
Avocado, halved, pitted, peeled and sliced
Jalapeno, thinly sliced
Red bell pepper, diced small
Lime, cut into wedges
Preheat grill to medium-high heat. Season chicken with chili powder and salt. Grill chicken, turning once, for 10 to 12 minutes or until the chicken is cooked through.
Transfer the chicken to a plate to cool slightly. Slice chicken into strips. Divide chicken into warm tortillas and top with sliced avocado, jalapeno slices, and red bell pepper.
Serve with lime wedges.
